Summery Citrus Quinoa Salad

This is a recipe I get asked for all the time, plus it's a favourite go-to lunch of mine! This delicious and nutrient packed summer salad can be paired as a side dish to your favourite grilled veggie, protein or just enjoy it on its own as your main squeeze. I guarantee your body will thank you. Great source of protein, fibre, and a good dose of the RDA for many other nutrients and minerals.

SUMMERY CITRUS QUINOA SALAD

1 cup quinoa

1 cup diced cucumber

1/2 cup diced figs OR dried apricots OR raisins

1/2 cup drained canned mandarin oranges (water packed) - halved

1/4 cup sunflower seeds OR roasted almonds

1 green onion, diced

2 tbsp. chopped fresh coriander OR parsley

Dresssing:

1 tsp. grated lemon OR lime rind

3 tbsp. lemon OR lime juice

1 tbsp. sesame oil

1 tsp. sugar

1/4 tsp. each ground cumin & coriander

In a small bowl combine all dressing ingredients well.


Cook quinoa according to package directions (or follow my favourite way below) Allow quinoa to cool.

Combine all ingredients. Pour dressing over and stir.

Stores well in fridge up to 4 days.


Quinoa cooking directions: Rinse quinoa well in mesh colander and let drain. Place 1 cup of quinoa in 2 cups of water in a medium to large saucepan. Bring to a boil over med-high heat and then turn heat down to maintain gentle boil. Cook until quinoa had absorbed all water (10-20 minutes) reducing heat as time goes on to maintain gentle boil.
